Inspiration for JACOB’S LADDER: “Welcome to LA! Let’s play with the superhots for the first time.:”
Jacob Khalil comes to town and we decide to finally use a good amount of the superhots- as many of the Caroilna Reapers are as ripe, and without a big buffer of fruit. A solid amount of the fermented “Super Chili” pepper gave an instant heat hit, a few Habañeros hit the middle, while the Reapers give it lasting power. He wanted to know what we should call it - ‘Jacob’s Ladder’ seemed perfect to me. He’s one of the best artists I’ve ever seen, so he drew something in a few seconds, and it’s entirely the story of the sauce in one amazing image. You are on the ladder, and it only goes down…
