Mk11: “MENSES”

Inspiration for MENSES:A continuation and rewrite of the dirty jokes of the hot sauce contest night: a more fitting description of a final product named alike but tasting like bad ketchup.”

Re-Cooked from the Contest Night group submission of Austin Mckenzie & Miles Rasmussen, Toliver Harris, and friends. Original recipe needed a substitution because the first attempt ended up closer to a slightly tangy Ketchup (‘MK0.11” - the peppers chosen were not hot enough to counterbalance the taste of the tomato and garlic. We re-cooked it with many exotic hot red peppers and spices and the result is clearly a winner. Hot and red, like a Ferrari.

”RB-003”, Red Ghost, Carolina Reaper, “Reapion”, Pequin, & “Super Chilis”

Pepper Preparation
1/4 of fresh peppers Charred prior to cooking.

Fruit & Vegetables
Cherries, Cherry Tomatoes, Pineapple, Onion, Fermented and Fresh Garlic

Additional Ingredients
Tequila. Grey Poupon Mustard, Dill Pickles, Citric Acid

Spices & Salt/Pepper
Coriander, Paprika, Salt Brine & Pepper

1/2 Sweet Rice Vinegar & 1/2 Apple Cider Vinegar

Blood Red

Flavor Profile
Rich and fruity with a hint of tomato, spices, and vegetable base. But VERY HOT.
